Rfissa is Morocco’s ultimate comfort dish. Deeply aromatic and soul-warming, it represents the generosity and warmth of traditional Moroccan home cooking.

Layers of paper-thin, steamed shredded pastry (trid) form the base, which is saturated in a saffron-golden chicken broth enriched with onions, brown lentils, and fragrant fenugreek (halba). It is customary to serve Rfissa in a single large earthenware platter (gsaa) so that family and guests can eat together with spoons from the communal dish.

Ingredients

For the Chicken & Broth (Marqa)

  • 1 whole free-range chicken (approx. 1.5 kg), cleaned and portioned
  • 3 large yellow onions, sliced into thin crescents
  • 4 garlic cloves, minced
  • 150g brown lentils, rinsed and soaked for 30 minutes
  • 2 tbsp whole fenugreek seeds (halba), rinsed
  • 1 tsp smen (aged fermented butter)
  • 80ml extra virgin olive oil
  • 1 tsp ground ginger
  • 1 tsp ground turmeric
  • 1 tsp Ras el Hanout
  • 1/2 tsp crushed saffron threads
  • 1 bunch fresh coriander and parsley, tied with kitchen twine
  • 1.5 to 2 liters water
  • 1.5 tsp salt and 1 tsp black pepper

For the Trid (Pastry Base)

  • 500g fine semolina mixed with 250g white flour, kneaded and cooked into paper-thin trid crepes (or day-old plain Msemen shredded into ribbons)

For Garnish

  • Hard-boiled quail eggs (or chicken eggs)
  • Medjool dates stuffed with walnut halves or blanched almonds

Instructions

    In a large heavy-bottomed pot or couscoussier base, heat the olive oil and smen over medium heat. Add the chicken, sliced onions, minced garlic, ginger, turmeric, Ras el Hanout, saffron, salt, and black pepper. Sauté for 8-10 minutes until onions soften and spices become fragrant.

    Pour in 1.5 liters of water and add the tied herb bouquet, soaked lentils, and fenugreek seeds (if you prefer a milder fenugreek taste, tie the fenugreek in a cheesecloth bag to remove later).

    Bring to a boil, then reduce heat to medium-low, cover, and simmer for 45-50 minutes until the chicken is tender and the lentils are cooked through.

    Remove the chicken and place on a baking sheet; brush with a touch of butter and broil in the oven for 5 minutes until golden and crisp (optional but delicious).

    Taste the broth (*marqa*) and adjust seasoning — it should be richly spiced, savory, and aromatic.

    Steam the shredded trid or shredded msemen ribbons over the simmering broth for 5 minutes in the steamer basket (kesskess) until hot and soft.

    To serve: mound the warm shredded trid onto a large shallow communal dish (*gsaa*). Generously ladle several cups of hot broth and lentils over the pastry so it absorbs the flavors completely.

    Nestle the roasted chicken pieces in the center. Spoon more lentils, fenugreek, and onions over the top. Garnish with halved boiled eggs and stuffed dates. Serve immediately with extra broth in a side bowl.

Tips

  • Rfissa is traditionally prepared to celebrate new mothers and newborn babies in Morocco because fenugreek, lentils, and saffron are celebrated in Moroccan folk medicine for their restorative properties.
  • If making fresh trid feels too time-consuming, using day-old plain Msemen cut into thin strips is an authentic and widely accepted Moroccan shortcut.
  • Don't skimp on the broth — the pastry will soak up a surprising amount of liquid within minutes of serving.

Questions About This Recipe

What is fenugreek (halba) and can I omit it?

Fenugreek gives Rfissa its distinctive, slightly maple-like aroma and signature flavor. While you can reduce the quantity or boil it separately in a small cloth bag, it is the soul of authentic Moroccan Rfissa.

Can I prepare the components ahead of time?

Yes. You can cook the broth and shred the trid/msemen hours in advance. Reheat the broth to a rolling boil and steam the pastry right before assembling.
