You’ll learn to hydrate and hand-roll the semolina grain, then steam it in stages over a simmering seven-vegetable stew in a traditional couscoussier — a two-part steaming pot that’s central to Moroccan kitchens. The process is slower and more hands-on than most visitors expect, and that’s intentional: proper couscous rewards patience with a light, fluffy texture that’s very different from anything pre-packaged.
Alongside the technique, your chef will talk through the cultural role couscous plays in Moroccan family life — why it’s tied to Fridays, how recipes vary by region and season, and what makes a “good” couscous by Moroccan standards.
